How many wiki templates are there available I know there are template packages available for download but what do these really consist of

Wiki templates

There is only the one Wiki template (list template). Having Wiki Layout page templates like MOSS has for publishing pages would be a very nice feature (like the Web Part Page layouts ), but I haven't heard about anyone developing such a thing.
The template packages I think you are referring to are site templates. The last of the 'Fantastic 40' site templates were released just recently: http://www.microsoft.com/technet/windowsserver/sharepoint/wssapps/templates/default.mspx
There's also a link to the Group Workspace on that page which is a more enhanced site template than most of the 40.
