I haven't tried it out but I think it should be possible to just write a disc image in Standard Content Tool and then burn it with Nero so you have no problems dealing with UDF2.5 in Nero.
So I open Nero Burning Rom and I see the file explorer on the right and the Video_TS, Audio_TS folder on the left...So should I throw any "junk files" into Video_TS Or just leave them empty

I assume since you have Sonic's Advanced Content tool that you also have their Standard Content tool. I'm referring to the HD version, not the SD. In Standard Content, you can burn to DVD-R. In the layout edior, you can select to include the Advanced VTS folder. Point it to the top directory that includes the ADV_OBJ and HVDVD_TS folders. Right now, you can't burn dual layer projects unforunately.
I've also used Nero, but doing it as a DVD-Video disc and adding the ADV_OBJ and HVDVD_TS folders to the root directory of the project. You will need to throw some dummy info into the VIDEO_TS folder for it to burn though. Ignore all the errors about it not being DVD-Video compliant. Obviously, you're not worried about the SD portion of the disc. Funny thing of this trick, a Mac computer will see it as a hybrid disc and ask which version you want to play.
I wouldn't put Nero on the same machine as Advanced Content. For some reason it interferes with AVC importing. Sonic is trying to fix this issue, but it's been a problem for some time now. If you already did install it and need to use AVC, try it out and see if it works. If not, uninstall Nero and you should be good.
I haven't fully tested this, but you should be able to use Nero to make a DVD-ROM with UDF 2.50 and place the ADV_OBJ and HVDVD_TS folders in it. In theory, it might work. I hope to have time tomorrow to try it out.
I tried it today with a dual layer project and it didn't work. I can't say for sure that it's not the media that is causing the issue though. I used Verbatim DVD+R DL media and the player said it wasn't a vaild DVD. The same process with a single layer project worked. That was on some generic DVD-R media. So I can't say for sure whether or not it will work. You may have to give this one try on your end to what results you get.
"The file TITLEPAV001.EVO is larger than 2GB and therefoe cannot be stored in an iso filesystem. Please use the UDF file system to write such large files. This can be done by selecting another compilation type."
That error stops me from dragging my big .EVO in....any way around this
