I've imported some databases into 2005 Analysis services from 2000 and processed them successfully. But, I'm unable to modify any of the cubes. I also can't add any objects in a database. It lets me create a database however but I can't create the objects.
For example, when I right click on the Cubes folder, the only menu item I see is Refresh. When I right click on a cube, there is no Modify menu item.
Can anyone help me achieve getting the ability to create and modify

This is a bug in BOL, I don't see this entry in my local BOL (which has the latest updates). I can't see the page you referred to in the online version at http://msdn2.microsoft.com/en-us/library/ms188152.aspx either, so I suspect that the error may have been corrected. Unfortunately there were quite a few areas in BOL that were incorrect or incomplete when the product was released, but MS have released a couple of updates now and it is starting to get much better.
Another option to connecting directly to the server is to go File > New Project and choose the option to "Import Analysis Services 9.0 Database" this will create a project from the migrated database on the server. Some of the advantages with projects are that you can work disconnected and you can put the files under source control.

I'm not sure what the BOL is talking about there, could be a doc bug since I don't see a Modify at all. But its easy to modify the objects from BIDS (BI Development Studio) by connecting directly to the server and modifing the objects directly. Just choose File/Open then Analysis Services Database and this will connect directly to the server without having to create a project.

Just a bit more detail on the erroneous documentation. I'm not sure if it's the same on every workstation but the page I was referring to is in SQL Server 2005 Books Online with the title "Opening Cube Designer". The URL displayed on my workstation is:

The documentation seems to be inacurate then if this is the case. I read the following when I'm in the Cube Designer page of the of the SQL Server 2005 help.
The following table describes the methods you can use to edit a cube in either SQL Server Management Studio or Business Intelligence Development Studio.
SQL Server Management Studio

- or -
Right-click the cube in Solution Explorer, and then click View Designer.
